# How to make it:
- Whisk flour, baking powder, and salt in a medium bowl and set aside.
- Beat butter and sugar in a large bowl until light and fluffy, about 2 to 3 minutes.
- Incorporate egg, vanilla extract, and peppermint extract into the butter mixture until fully combined.
- Gradually fold dry ingredients into wet mixture until just incorporated.
- Split dough evenly into two portions; tint one portion with red gel food coloring by kneading thoroughly, leaving the other plain.
- Roll each dough portion between parchment sheets into 9x13-inch rectangles about 1/4 inch thick.
- Place dough rectangles in refrigerator for 30 minutes until firm.
- Remove top parchment and layer red dough over the plain dough, pressing gently to adhere.
- Starting at the long edge, roll the layered dough tightly using parchment paper into a log.
- Wrap log in parchment and chill for at least 1.5 hours until firm.
- Roll chilled log in crushed candy canes to create a festive edge if desired.
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Cut log into 1/4-inch rounds and arrange on prepared sheets 1 inch apart; bake for 10 to 12 minutes until edges begin to turn golden.
- Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
