# How to make it:

- Preheat oven to 350°F. Line a 9x9-inch baking pan with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
- Beat butter, cream cheese, and sugar until light and fluffy. Incorporate egg, Greek yogurt, and vanilla extract until smooth.
- Gradually add dry ingredients to wet mixture, mixing just until combined.
- Spread batter evenly in prepared pan. Bake for 13 to 15 minutes, or until edges are lightly golden and a toothpick inserted comes out clean.
- Allow cookie base to cool completely. Crumble into fine pieces in a large bowl.
- Add an additional 2 tablespoons of Greek yogurt to crumbs and mix until the mixture holds together when pressed. Add more yogurt by teaspoon if necessary.
- Roll mixture into 1-inch balls and place on a parchment-lined baking sheet. Freeze for 20 to 30 minutes until firm.
- Melt white chocolate or candy melts with coconut oil in 30-second microwave intervals, stirring until smooth.
- Dip the tip of each cake pop stick into melted chocolate and insert into each cake ball.
- Dip each cake pop fully into melted chocolate, tapping off excess. Add sprinkles immediately if desired.
- Stand cake pops upright in a styrofoam block or cake pop stand. Allow to set at room temperature or refrigerate until coating is firm.
