# How to make it:
01 - In a medium saucepan, combine rolled oats, milk, pumpkin purée, coffee or espresso, maple syrup, pumpkin pie spice, vanilla extract, and salt.
02 - Bring to a gentle simmer over medium heat, stirring frequently to prevent sticking.
03 - Cook for 7 to 10 minutes, stirring occasionally, until the oats are creamy and have absorbed most of the liquid.
04 - Divide the creamy oats evenly between two serving bowls.
05 - Add a dollop of Greek yogurt or whipped cream, chopped nuts, a sprinkle of cinnamon, and a drizzle of maple syrup to each bowl as desired. Serve warm.
