# How to make it:
01 - Preheat the oven to 400°F for roasting the sweet potato slices.
02 - Using a sharp knife, slice sweet potatoes lengthwise into 1/4-inch thick planks.
03 - Brush both sides of each sweet potato slice with olive oil and sprinkle lightly with salt.
04 - Place seasoned slices in a single layer on a baking sheet lined with parchment paper.
05 - Roast for 20 to 25 minutes, flipping halfway through, until fork-tender and lightly golden brown.
06 - Remove from the oven and allow slices to cool slightly before topping.
07 - Top with avocado and cherry tomatoes, cottage cheese and chives, hummus and feta, or hard-boiled eggs and fresh herbs.
