# How to make it:

01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper.
02 - Prick each sweet potato several times with a fork. Rub evenly with olive oil and sprinkle with kosher salt. Arrange on the prepared baking sheet.
03 - Bake sweet potatoes for 45 to 50 minutes or until fork-tender.
04 - While sweet potatoes bake, heat olive oil in a skillet over medium heat. Add black beans, corn, smoked paprika, cumin, chili powder, and black pepper. Cook, stirring, for 3 to 4 minutes until heated through and aromatic.
